Sausage Stuffed Zucchini Boats Recipe

Are you looking for a delicious and healthy dinner option that’s easy to make? Try this Sausage Stuffed Zucchini Boats recipe! These zucchini boats are loaded with flavorful sausage, gooey melted cheese, and crisp zucchini, making it a perfect combination of flavors and textures. Plus, it’s a great way to sneak in some veggies into your meal!

Ingredients:

– 4 medium-sized zucchinis
– 1 pound of Italian sausage
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 can of diced tomatoes, drained
– 1 cup shredded mozzarella cheese
– Salt and pepper to taste
– Fresh parsley, chopped

Instructions:

1. Preheat your oven to 375°F.

2. Cut the zucchinis in half lengthwise, then scoop out the seeds and flesh with a spoon, leaving a shell about ¼ inch thick. Reserve the flesh.

3. In a large skillet over medium heat, cook the sausage until browned and cooked through, breaking it up into small pieces with a wooden spoon.

4. Add the onion and garlic to the skillet and sauté until the onion is translucent, about 5 minutes.

5. Chop the reserved zucchini flesh and add it to the skillet along with the diced tomatoes. Season with salt and pepper and cook until the zucchini is tender, about 10 minutes.

6. Arrange the zucchini shells in a baking dish, then spoon the sausage mixture into each shell.

7. Top each zucchini boat with shredded mozzarella cheese.

8. Bake for 25-30 minutes, or until the cheese is melted and bubbly.

9. Sprinkle with fresh chopped parsley and serve hot.
