Nourishing Breakfast Pizza Recipe (Grain-Free)

This delicious and nourishing breakfast pizza recipe is perfect for those looking to start their day with a nutritious and satisfying meal. What’s more, it is grain-free, making it ideal for those who are sensitive to gluten or simply want to avoid grains.

Here’s what you’ll need:

Ingredients:
– 1 large sweet potato, peeled and grated
– 3 eggs
– 1/4 cup coconut flour
– 1 tsp garlic powder
– 1 tsp dried oregano
– 1/2 tsp sea salt
– 1/4 tsp black pepper
– 1/4 cup tomato sauce
– 1/4 cup chopped spinach
– 1/4 cup chopped mushrooms
– 1/4 cup chopped red onion
– 1/4 cup crumbled goat cheese
– 2 tbsp chopped fresh parsley

Instructions:

1. Preheat the oven to 375°F (190°C).

2. In a large mixing bowl, combine the grated sweet potato, eggs, coconut flour, garlic powder, oregano, sea salt, and black pepper. Mix well to combine.

3. Grease a 9-inch pizza pan with some coconut oil or cooking spray. Spread the sweet potato mixture evenly onto the pan, pressing it down to create a crust.

4. Bake the crust in the preheated oven for 20-25 minutes, or until it is golden brown and cooked through.

5. Remove the crust from the oven and spread the tomato sauce over the top, leaving a small border around the edges.

6. Sprinkle the chopped spinach, mushrooms, and red onion over the tomato sauce.

7. Sprinkle the crumbled goat cheese on top of the vegetables.

8. Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.

9. Remove the pizza from the oven and sprinkle with chopped fresh parsley.

10. Slice and serve immediately.

This nourishing breakfast pizza is a delicious and healthy way to start your day. It’s packed with protein, fiber, and essential nutrients, and is sure to keep you feeling satisfied and energized throughout the morning. Enjoy!
